Matcha lemonade is one of the most refreshing warm-weather drinks you can make, and it has become a popular menu item at cafes precisely because the combination works so well. The bright, citrusy acidity of lemon juice cuts through the earthy richness of matcha and creates a drink that is simultaneously cooling, energising, and genuinely complex in flavour. It is also easy to make at home with minimal equipment.
Why lemon and matcha work together
The acidity of lemon juice does
two things in a matcha lemonade. First, it brightens the flavour of the matcha
by providing a contrasting citrus note that makes the earthy, vegetal character
of the tea taste cleaner and more refreshing. Second, and somewhat
surprisingly, the vitamin C in lemon juice may actually enhance the absorption
of some of the antioxidant compounds in matcha by protecting them from
oxidation in the digestive tract. This is a genuine nutritional interaction,
not just a flavour one.
Ingredients
•
1 teaspoon matcha powder
•
60 ml warm water at 70 to 80 degrees Celsius
•
Juice of one lemon, about 30 to 40 ml
•
250 ml cold water or sparkling water
•
1 to 2 tablespoons honey or simple syrup
•
Ice
•
Lemon slices and mint for garnish, optional
Method
Dissolve the matcha in the warm
water first, whisking until completely smooth. Let it cool for a minute or two
while you prepare the rest. Mix the lemon juice with the cold water and
sweetener in a tall glass, stirring until the sweetener dissolves. Fill the
glass with ice. Pour the cooled matcha concentrate over the top slowly, either
stirring it in immediately or pouring it over the back of a spoon for a layered
effect before stirring. The matcha layer floating on top of the pale yellow
lemonade looks striking in a clear glass.
Sparkling vs still water
Using sparkling water instead of
still water adds a fizzy, refreshing dimension to the drink that many people
prefer for a summer cooler. The carbonation lifts the flavours and makes the
drink feel lighter. Still water gives a cleaner, more concentrated lemonade
character. Both work well. Adjust the sweetener to your preference, keeping in
mind that carbonated versions often taste slightly less sweet than still
versions at the same sugar level.
Sweetener balance
The amount of sweetener needed
depends on how tart your lemon is and how sweet you prefer the final drink.
Start with one tablespoon and taste before adding more. The matcha adds a
slight natural sweetness when it is good quality, and the lemon provides all
the tartness you need. Honey works particularly well in matcha lemonade because
the floral notes complement both the lemon and the matcha.
Common questions
Can I make a large batch in
advance? Mix the lemonade base with
sweetener in advance and store in the refrigerator. Prepare the matcha fresh
when you want to serve, since dissolved matcha starts to separate when it sits
for a long time.
Does the lemon affect the
matcha colour? Yes, slightly. Acid
can shift the green colour of chlorophyll toward a more olive or yellow tone
over time. Drink it soon after mixing for the most vivid colour.
Can I add ginger to this? Yes. A thin slice of fresh ginger steeped in
the warm matcha water before straining adds a warming note that works very well
in the lemonade version.
