Clumpy matcha is one of the most common frustrations for people making matcha at home, and it is almost always preventable. The clumping happens for specific, understandable reasons related to how matcha powder behaves, and once you know those reasons, the fixes are simple and take only a few extra seconds. Why matcha powder clumps
Matcha is an extremely fine
powder. The particles are milled to a size measured in micrometres, far finer
than most culinary powders including icing sugar. At this scale, the particles
have a very large surface area relative to their mass and develop static
electrical charges that cause them to attract each other and stick together.
Humidity accelerates this significantly. Even opening a tin of matcha in a
humid kitchen allows moisture from the air to be absorbed into the powder,
which causes the particles to bind together even more firmly.
The second reason is liquid
contact without prior sifting. When you pour water directly onto a mound of
unsifted matcha, the outer layer of powder absorbs water first and forms a
paste that seals the dry powder underneath away from the liquid. No amount of
stirring easily breaks this up, and the result is dense green lumps floating in
your drink.
The fix: sifting
Sifting is the single most
effective solution and takes about ten seconds. Hold a fine sieve or tea
strainer over your matcha bowl or mug. Add the measured amount of matcha to the
sieve and use a small spoon or your finger to push it gently through the mesh.
The sieve breaks up all the clumps before any liquid is added, and the
resulting fine, even powder dissolves almost instantly in warm water. This step
is not optional for a smooth result. It is the difference between a
professional-quality drink and a lumpy one.
Water temperature and order of addition
Even after sifting, the order in
which you add water matters. Sift the matcha into the bowl first, then add water.
If you add water to the bowl and then add matcha on top, some powder will float
on the surface and resist absorbing the water, creating small clumps that stick
to the sides of the bowl. Water first, then matcha, is also difficult because
the powder landing on water tends to form a crust on top. The correct order is
always: sift powder into the dry bowl, then add water.
The water temperature also
affects how completely the matcha dissolves. Cold water dissolves matcha very
poorly. Warm water at 70 to 80 degrees Celsius is the right range for clean
dissolution. If you are making an iced drink, always dissolve the matcha in
warm water first and then add it to cold milk and ice after.
Whisking technique
After sifting and adding warm
water, whisking in the right motion completes the process. A W or M motion,
moving the whisk briskly back and forth across the bowl, creates tiny waves
that fold the powder into the water evenly. A circular stirring motion just
moves liquid around without incorporating the powder as effectively. Whisk for
15 to 20 seconds and check that no dry patches or lumps remain before drinking.
Preventing clumps in storage
Proper storage prevents clumping
before you even open the tin. Matcha should be stored in an airtight container,
kept away from light, heat, and moisture, and ideally in the refrigerator or a
cool, dry cupboard. After measuring out your serving, seal the tin immediately
rather than leaving it open on the counter. When taking matcha out of a cold
fridge, let the closed tin come to room temperature before opening to prevent
condensation from forming on the cold powder inside.
